Starderi is een prachtige wijngaard, aangeplant met ongeveer 50 jaar oude Nebbiolo stokken. De opbrengst is vrij laag en geeft enorm elegante Barbaresco. Het lukt Olek supergoed om de wijn een reflectie te laten zijn van die mooie cru Starderi. Complex, gelaagd, genuanceerd, precies.. Nu al verschrikkelijk goed op dronk, maar evalueert door de jaren naar een nog verfijndere versie van zichzelf.

  • In de wijnkelder: 2 maanden maceratie op de schil en spontane fermentatie in beton. Daarna persen, rijping in grote Slavische vaten. Niet gefilterd en geklaard, minimaal sulfiet.
