Francesco Pozzobon, from Nizza Monferrato in the heart of the Piedmont region, grows his own grapes in a holistic, biodynamic fashion with a low-impact ecosystem. Once ripe, the grapes are simply escorted to the cellar, without the aid of any additives.
For this dark fruited, succulent red, organic Dolcetto grapes were hand harvested and fermented in cement tank with indigenous yeast with carbonic maceration techniques, then bottled with no filtration, fining nor added sulphur. A light-medium-bodied natural red, produced with the classic Beaujolais winemaking technique, you'll find dark fruits with an earthy edge and a delicious hint of volatile acidity.
